RED BELL PEPPER

1. Red peppers contain more than 200 percent of your daily vitamin C intake. Besides being a powerful antioxidant, vitamin C helps the proper absorption of iron. If you are iron deficient, try combining red peppers with your iron source for maximum absorption.

2. Red bell peppers are a great source of vitamin B6 and folate. Both these vitamins and minerals can help prevent anemia.

You only need between 75 and 90 milligrams of vitamin C each day, and one large yellow bell pepper, which is equal to about 1 cup of chopped peppers, supplies 341.3 milligrams. 

Vitamin C helps your body make and repair your tissues and keeps your bones and teeth healthy. The vitamin helps you heal from wounds as well. Vitamin C is an antioxidant that also helps protect your cells from damage caused by the environment and the aging process. One yellow bell pepper contains 48 micrograms of folate, which is about 10 percent of what you should get each day. Orange peppers are a good way to increase your vitamin B-6 intake, which should be 1.3 to 1.7 milligrams. Vitamin B-6 helps your body metabolize protein and red blood cells. It also helps your body's immune and nervous systems function. Getting inadequate supplies of B-6 could result in anemia because it is responsible for moving hemoglobin through your blood stream. A stable blood sugar level relies on getting the right amount of vitamin B-6.
